Pick a day, any day…. Now chop, bake, cut, freeze, whatever you need to do to make life easier. For instance my grocery trip from the other day. I used what green pepper and onion I needed so I chopped, diced and froze. I’ve used them twice this week just to make our weekly egg muffins and for our omelets this morning. It is so convenient to have one less step to do during your busy work week. (Plus fresh produce is cheaper than frozen sometimes…so cha-ching) Sometimes I’ll buy fresh broccoli and cauliflower wash it and chop it. It serves 2 purposes: daytime snacking and mealtime cooking. When those munchies hit you, you’re less likely to cave and dive right into your kids goldfish or grab that candy bar by the checkout when you know you can wait 10 minutes to get home and it’s waiting for you. Ben says Sunday’s are for baking in our house cause I spend the afternoon getting us prepped for the week. Take the time to make egg cups with veggies and bacon or bake your own healthy muffins. I make 2 batches and seperate into two’s and put them into ziplocks in the fridge. They last up to 5 days and all you have to do is grab and go. No more “sugary” cereals, pop tarts or stops at McDonald’s. So basically I spend $8 for 10 meals. I’m going to be honest it can be time consuming, but it is so worth it. In our house my zucchini muffins are “cupcakes” it’s the only way Chase will eat them. Hey I do what I gotta do and he loves them. Pick a day, take the time and see the results of your hard work pay off.

Well I told you Tuesday in your bookstore that I had never read a blog. Well now I have and I am hooked. I am definitely on the same page with you and as you saw what I posted about taking care of me on my Facebook page I am ready to be on this journey. I trult felt led to start this blog and put it all out there. The good, the bad, the ugly. I told Ben if I only have 1 person who gets encouraged then I feel like I have accomplished my goal.
