No Fear

I hope you all have had a great starter week. I have been so touched by the comments and messages. It blesses my heart that someone is actually reading this and gaining courage to take their first steps. It’s like learning to ride a bike, your going to fall, get scraped, get mad (At seeing no progress), but you WILL get back up and finally you get it and your cruisin( All the way to the finish line or in your case the “goal” line). In my house Ben has labeled Sundays as baking day. All week long I Google, Pin and research recipes. Every week I strive to find that 1 recipe that I just have to try and then I find the courage to make it. I like simple, but let me tell you less is not always better and some of these recipes are intimidating. But you know what? I try anyway. Tonight’s dinner Sun-dried tomato and spinach stuffed chicken with long grain rice and green beans. Not so bad huh? It was actually really good but we decided next time it needed something different. I am actually starting my own cookbook. I find all these great recipes and make them my own. So I print them out and write my tweaks down until I get it just right and add it to my binder. Remember how I said there are some you delete and some you just keep trying because you know it has potential. These will become your go-to’s. It’ll give you a list to go back too and find something that’s just the right thing for the mood you’re in. This week’s breakfast is apple-cinnamon muffins and let me tell you for one I’ve never shredded apples before and two you won’t even recognize there isn’t any refined sugar in them. So this week start searching for new and healthy versions of what you already like and pick at least one that you would not normally choose. You may be surprised at what you’ve been missing. P.S. Go buy yourself an apron. Best investment I’ve made other than our cast iron skillet. That serves 2 purposes 😂

Born and raised in small town USA Lexington, North Carolina more famously known for our BBQ, where our tea is sweet and our accents are sweeter (Oh yeah and you get that good ice, you know the hospital kind) at all our restaurants. If I was a travel agent I would be sure to disclose that, cause that is a selling point to me for sure. Except now, I am on a permanent vacation living at the coast, married to my wonderful husband (Ben) with three handsome boys (Kaleb, Joshua & Chase), a dog (Baloo) and as of yesterday a new fish (Pete). This journey I am on started out as trying to lose weight and ended up with me finding myself.
